Canerock is crafted with Jamaican rums from the Clarendon and Long Pond distilleries, using both pot still and column distillation methods. These rums are infused with natural spices such as Madagascar vanilla beans, Caribbean coconut flesh, and a touch of local ginger. To enhance its complexity, aged Jamaican rums are added to the blend, which then rests for a few months in oak barrels, 15 to 20% of which are sherry casks, before bottling.
Nose: Rich and complex, with pastry-like flavors of vanilla, coffee, dark chocolate, and coconut
Palate: Caramel, sweet spices, and grape, followed by allspice and delicate tannic notes
Finish: Both powerful and smooth, with black cherry, prune, coconut, and fresh notes of mint, ginger, and cloves
