Production of the Les Prémices Egly-Ouriet Champagne
The Les Prémices cuvée is a harmonious blend of the three main Champagne grape varieties: 33% Chardonnay, 33% Pinot Meunier, and 33% Pinot Noir. The grapes are sourced exclusively from the Massif de Saint-Thierry, specifically from Trigny, a historic terroir for the Ouriet family. The clay-limestone soils rich in chalk contribute exceptional minerality and freshness to this wine. The vineyards, around 40 years old, are carefully tended to ensure the highest quality grapes. The wine is vinified in oak barrels, followed by 36 months of aging on lees, developing a silky texture and great aromatic complexity. The absence of malolactic fermentation preserves a beautiful tension and offers remarkable aging potential. With a low dosage of 2 g/L, Les Prémices reflects the Egly-Ouriet signature: purity, finesse, and precision.
