In 1847, a royal ordinance by Louis-Philippe officially associated the name "Chambertin" with the village, which became Gevrey-Chambertin. This parcel selection of old vines, over 35 years old, produces a wine with remarkable aromatic intensity.
Vinification & Aging:
The grapes are carefully handpicked and sorted. The degree of destemming and the proportion of whole clusters vary depending on the vintage. Each day, a pigeage is performed to extract color, tannins, and aromas from the grapes. After a 19-day maceration, alcoholic fermentation is complete. The free-run wine is extracted by gravity, while a gentle pressing yields pure press wine. Aging occurs over 14 months in French oak barrels (20 to 30% new barrels), followed by 2 months in a vat.
Tasting Notes:
Our old vines faithfully reflect the essence of this exceptional terroir. The wine displays a dark ruby color, clear and bright, with aromas of black berries. On the palate, it is powerful and concentrated.
