In the 17th century, the monk Dom Pierre Pérignon set himself the goal of creating the best wine possible. To do this, he began to blend several grape varieties. It is thanks to him that this method is applied today. Others also say that champagne was discovered in this way. Dom Pérignon became THE reference for champagne.
